This aged Shoumei brews to a deep golden yellow liquor with a thick, smooth body and long-lasting sweet aftertaste. The leaf bottom is thick, oily, and evenly reddish-brown, a sign of slow aging under optimal conditions.

Brewing Instructions

Gaiwan Method (Recommended)

Teaware: Gaiwan
Tea Amount: 1 brick
Water Volume: 120ml
Water Temp: 100°C

  1. Warm the Gaiwan: Fill 1/3 with hot water, swirl, then discard.
  2. Rinse the Tea: Add 1 cube, pour water, and immediately pour out.
  3. Steep: Pour boiling water gently over the cube and let steep:
    • Infusions 1–3: 3–5 seconds
    • Infusions 4–6: 10 seconds
    • Later brews: Increase steep time as needed
  4. Serve: Pour into small cups. Fill each to 70% full for best enjoyment.
