How to brew with the gaiwan

Add leaves to the gaiwan, pour in hot water and cover. To serve, tilt the lid slightly to hold back the leaves and pour through the gap into the cups. The flared rim stays cooler than the bowl, so hold the gaiwan by the rim and lid knob. The lid can hover on the rim at an angle, which makes it easy to vent steam and pour.
